Default Kansas Kaviar Dip

QB member Donna Freak just posted a dip recipe that her niece made and it made me want to post one that my family uses that is very similar.

2 cans original or hot Rotel (drained) (I use 1 can of each)
1 can Black Beans (drained)
1 can Blackeye peas (drained)
1 can peg corn (drained)
stalk of green onions chopped
1/2 red onion chopped
2 teaspoons cayenne pepper
1 small bottle Zesty Italian Dressing

Mix all ingredients in large bowl and put in fridge for at least 3 hours. My family eats Totitos with this dip but I love to put several spoonfuls of this dip in the middle of a rolled up tortilla. YUMMY!!

What is peg corn? By the way, the Wichita Quilt Show was awesome.

Peg Corn is also known as "Shoepeg" Corn. I buy the Green Giant brand "White Shoepeg". I'm also glad you liked the Wichita Quilt Show that was held in June. It did feature some great quilts.

Made this yesterday. Very good. I only used 1 tsp of cayenne pepper. I also squeezed lime juice over it and it was a big hit with my guy. Thanks.
