OKSGlad and MiraB ... I like the looks of those veggie twists on meatballs! Also, the extra ginger zip in it. Would be good as a meatloaf too, I'm thinking. Thanks for the ideas.

Funny, I'm making meatballs for dinner tonight.
On another note, I've officially joined the PC club. Better late than never. I have Alabama and Boy's Playmate done and in their appropriate threads. Feel free to drop by and encourage me to keep going. Or, if you didn't finish your PC yet, join me so I don't get lonely.

I'll have to try your recipe OKSglad...I've never put potatoes in mine..
3 lbs ground beef
3 eggs
6 slices white bread cubed
1 med sized onion chopped
1/2 to 3/4 cup milk or 1/2 & 1/2
4 cloves garlic
1/2 cup fresh chopped parsley
sprinkle of oregano/basil
I/4 cup parmesan cheese
In a blender crack 3 eggs , add milk, and the rest of the ingredients except the bread & cheese...blend then pour over the cubed bread then add & mix with the ground beef.. add cheese is optional...if the mix is too soft add breadcrumbs.. I roll them up into balls and bake them in the oven.. My oldest grandson call them "Gramballs" because they're the best meatballs grandma makes..
