I always wonder, if Velveeta is supposed to be cheese, why do they sell it from the non-refrigerated section of the store? Isn't cheese supposed to be refrigerated?

I use a little velveeta and don't add any salt to recipes because it is salty.

Velvetta freezes good. I cut mine into chucks and freeze in freezer bags and get out what I need when i get ready to use it. I like it in soups and on cooked broccoli and on top of casseroles.
