    Amazing work of art! This is such an intricate pattern, I understand the hexagons and diamonds but are the stars from single triangles?

    No, it's pentagons, not hexagons. And the stars are a pentagon with five triangles. Have a look at this page, it will show you the shapes and help you understand how it's constructed:
