Just to let you know what I did: I took the advise from most of you. I made the full hour-glass block and then trimmed. Thanks everyone, it turned out beautifully.

I've been making several quilts with snowballed squares. I turned each one and sewed back the other way 1/2" away. No I have a huge pile of HST's ready for something. Even if you just sew your cutoffs together you can make a mug rug or pot holders. Then no waste.
