I had always heard about cheap Mexican vanilla, but the one time I was there, I thought it was fairly expensive. And that was years ago.

People donate vanilla extract to the food shelf where I volunteer, but we can't put it out because it is alcoholic. Guess who has about 16 ounces of the real stuff in her cupboard right now! (they do allow us to take home what can't be put out.)

I'd love to make almond extract! What do you use to pre-soak your almonds? What proportions of almonds and vodka do you use? Thank you!

I guess some people pre-soak their almonds, but I don't find it necessary. I use about 1 handful of almonds to 1 cup vodka. However, I'm trying some right now using brandy instead, for a more unique flavor.
