Thankyou, the penny has finally dropped, I must have been having a "Senior Moment", the fold is then used as a guide to the center of the fabric which you then align to the fold in the base fabric.
I was thinking you folded it the other way, that is why I could not understand why you would fold it and then open it up.
I am giving a tutorial on how to make the folded Dahlia next Wednesday so I had better look like I know what I am doing.
