    Good idea for the lettuce ... a nice contrast from the soft warm comfort food of the baked potato to the crunchy fresh taste/feel of the salad!

    And could further supplement with a chili .... to top the potato ... and can be nice atop the fresh veggies too.

    But by now, our menu is set .... and most of these will be no help to you! Could always keep them for The Brier or Stanley Cup!

    There is a bread that is sold in the deli section at most supermarkets. I can't for the life of me remember what it's called, but the slices are only about 2 1/2" square. Get a loaf of that, spread some cream cheese on each slice, press a slice of cucumber into the sour cream, them sprinkle with a bit of dill. Very easy to make, and they're really good!
