    Default Veggie Ruben Sandwich

    I looooovvve a Ruben sandwich...the old fashioned kind from the Jewish Deli, piled high with meat, cheese and dripping with dressing. :::sigh::: This kind of sandwich must be a million calories and super high in fat and cholesterol. Maybe when I was in my 20s I could pull that one off, but not today.

    I need to cut back, so this recipe intrigued me. There's no meat, but yummy mushrooms and some spinach thrown in for good health measure. It has a 5 star rating. I'm gonna try it. I have the sauerkraut fermenting already. I'm making my own Jewish Rye bread today and make the Rubens for dinner in a couple of days.

    This looks interesting. DH is keto so everything meat is on his diet, but I am always looking for something different that we both might enjoy. I could change his rye bread out for chaffles too.

    I splurged and mixed half shitaki mushrooms in with the white button mushrooms. Very nice! This recipe is a keeper!
