Cranberries
I made this recipe at Thanksgiving, but I cut the "pie" into squares to serve. The recipe warned that it was tart, so I wanted small servings. Also took a can of Redi-whip to top. https://www.allrecipes.com/recipe/12...cranberry-pie/

Thanks for the recipe, looks good and I make the desserts for Sunday's dinner so always looking for something new to try out. I also have a glutton person in the bunch so I try to use my almond flour for recipes like this.

You got my attention at "cranberries", as I tend to like most anything made with them!
Is this more of a coffee cake sort of texture? or perhaps scone-like?
Would you add any extra cranberries?

I make this recipe every year because everyone seems to love it.
1 lb. fresh cranberries
1 cup sugar
1 unpeeled orange, chopped in the food processor
Put all ingredients in a covered casserole. Microwave on full power for 4 minutes. Stir. Microwave for 4 more minutes.

I have already made it again because I left the first one on the Thanksgiving dessert table! The almond extract is the secret ingredient! Also, I prefer it the next day, not warm.
The second time, I creamed everything before adding fruit, nuts, and flour.
I'm thinking this would work with other fruit, Maybe blueberries? Let me know if you try before I do!

A guild member brought this to our potluck and it was absolutely delicious! It is more of a square than a pie. In the recipe comments, some people added almond flavouring, or orange zest, more cranberries and/or chopped nuts.

I love cranberries too. So does the DH. I have some cranberry sauce in the fridge right now.
Thanks for these recipes. They both look like they are very easy and inexpensive to make. I had been planning on making this one: https://www.goodhousekeeping.com/foo...d-tart-recipe/ but I kind of like both of yours better. Mine is a little complicated.

Cranberry Salad
4 C fresh or frozen cranberries
1 C sugar (or less)
1 pkg small marshmallows (sister adds in morning, I like less)
grind berries, mix and let stand overnight
day of serving add
2 C chopped apples, skins on
2C pineapple tidbits or crushed drained
1 1/2 C whipping cream
1 1/2 C nuts (optional)
Mix together chill and serve.
we like adding pomagrante seeds gives a nice crunch...dont need to add nuts.

add 1 cup sugar
set aside to sweeten and juice up
make jello with 1 lemon and one lime. Small pkgs
use 2 cups boiling water and only 1 cup cold or ice after jello is dissolved
refrigerate To soft set
stir in cranberries, 2-4 stalks celery(chopped) and 1 cup chopped walnuts
chill to set.
