Potato pancake recipe

I am looking for a recipe. My Dad is always talking about his grandmother's potato pancakes she used to make him. I would love to get the recipe and make him some for Christmas. Does anyone by chance know how to make them??? It would be greatly appreciated!!!

My mom always made potato pancakes with leftover mashed potatoes. Add a bit of flour, chopped green onion or fresh chive, salt and pepper, a beaten egg. Shape into patties and chill. Dredge in flour before frying in hot oil. Fry until golden on both sides. Very easy and a great way to get rid of leftover mashed potatoes.

My late husband's favorite was potato pancakes, I didn't have a recipe, but grated three medium size potatoes, added 1/2 a cup of flour, 1 egg, 1/4 cup chopped onion, salt and pepper. Mix well and drop by ladle onto a hot griddle, cook till golden, flip and cook other side to a golden brown.

6 Med potatoes
3 3ggs
1 tsp salt
1/4 tsp pepper
1/2 cup flour
one small onion finely grated (I use food process until it's like pulp)
1 tsp baking powder
Peel and grate potatoes (food processor) - drain half the liquid and mix in the rest of the ingredients. Drop by spoonfuls in hot oil (not too deep- like you were frying any kind of patty). May be frozen by placing pancakes between layers of foil or waxpaper. When ready to serve, reheat uncovered 450 deg for about 10 min until crispy. You can halve the recipe for a small batch. serve with apple sauce or sour cream.
I've made them many times and they are absolutely devine.

You are making my mouth water. Mother used to make these, too, with left-over mashed potatoes. I never did know the exact recipe as she would say a little of this and a little of that, this much flour, etc. Then it would go into a hot iron skillet with lard. I can still taste them.

My dad used to make these, very similar to what's already been posted, but he would mix everything up in the blender rather than fussing with grating. I remember the batter turning pinkish/grayish from the potatoes, and he fried them hot in butter making them a real guilty treat. We called them flinsen.

My husband makes potato pancakes. He bakes several potatos (like he's making baked potatoes). Puts them in the fridge overnight and then peels and grates them the next day. They he just mixes them with onion and a little egg and fries them.
