This is the recipe I use. My mom always called them Latkes

Peel and grate potatoes (food processor) - drain half the liquid and mix in the rest of the ingredients. Drop by spoonfuls in hot oil (not too deep- like you were frying any kind of patty). May be frozen by placing pancakes between layers of foil or waxpaper. When ready to serve, reheat uncovered 450 deg for about 10 min until crispy. You can halve the recipe for a small batch. serve with apple sauce or sour cream.

I've made them many times and they are absolutely devine.
