I saw a thread that someone was looking for a whoopie pie recipe..here it is...so delicious
preheat oven to 350
no need to grease the cookie sheets...but I use a silpat on the pan
4 cups of all purpose flour
1 cup of unsweetened cocoa powder
2 teaspoons baking soda
1/8 teaspoon salt
1 cup shortening or lard
2 cups of sugar
2 eggs
2 teaspoons vanilla extract
1 tablespoon of apple cider vinegar
1 cup less 1 tablespoon of milk
1 cup of hot water
filling:
3 tablespoons all purpose flour
1 cup of milk
3/4 cup shortening or lard
1 1/2 cups of powered sugar (10x)
2 teaspoons vanilla extract
to make the cookies, in a bowl, sift together the flour, cocoa, baking soad, and salt. In a separate bowl, with a mixer, cream the lard, sugar, eggs and vanilla until smooth. Pour the vinegar in a 1 cup measure and then add the milk to make it sour. Add the dry ingredients and the sour milk alternately to the egg mixture, blending well. Add the hot water and blend until smooth. Drop by teaspoonfuls, spaced apart onto a cookie sheet. Bake for 8 minutes, until golden and crispy around the edges. Allow the cookies to cool for 5 minutes before removing to wire racks to cool completely.
To make the filling, place the flour in a saucepan. Using a whisk, gradually add the milk and whip until smooth. Cook over medium-high heat for 5-7 minutes, stirring constantly, until thick. Remove from the heat. cover and refrigerate until completely cool. In a mixxing bowl, cream together the lard, sugar and the vanilla. Add the cooled milk mixture and beat for 7 minutes, until fluffy.
To assemble the Whoppie Pies, spread the filling on the bottom side of half of the cookies. To the filling with the remaining cookies, bottom-side down, to make a cookie "sandwich"
You can wrap each one in cellophane or in wax paper..or store in a plastic container with a lid.
