Don't make the quilt. You already know she won't use it and that might be more hurtful to you than not accepting the offer in the first place. It is her baby's room and her decision on decorating. I have had situations like this and my mental health was better when I "just let it go" and then did a quilt for someone who would appreciate it or for chairity.
