Some people make quilt blocks using hankies. If she has enough she could make small wallhangings for each person using a few blocks with hankies in each one. Hankies can be used to make cute butterflies or fan blocks.
Personally, I use hankies to make labels for my quilts, usually 1/4 of a hankie per label.
