I have a room next to my sewing room that has no ceiling (but has exposed floor joists from floor above), and my roll of batting is hanging on a rod from the floor joists overhead like a giant roll of bathroom tissue. We nailed brackets on the floor joists to hold the rod (broomstick) that goes through the center of the roll. That keeps it up out of the way, but it's also readily accessible.
