I have done this for years. Only I just put them in a sink of hot water to thaw for a few minutes. The skin comes off so easily. It is not great for eating as a fresh picked peach from a tree because they are a bit mushy. They are wonderful though for cobblers or for using on ice cream or for making preserves. So do not expect it to be like a fresh picked peach just for eating. That is wrong for the article to say that. Anytime a fruit is frozen you lose that firmness.
