I'm afraid to can. I've just always frozen what we produce (which hasn't been a lot), but would love to expand and can if I weren't such a chicken!! Anyone have a fool-proof process that won't kill us???
I don't think you can can zucchini. It will get too soft. I think you can pickle it, however.
I batter dip and fry the flowers - it cuts down on fruit production and it's really delicious. The flowers have to be cooked within 4 hours of harvesting (which is why they are such a delicacy in French restaurants). I use a beer batter.
