I konw what you mean....Have a quilting shop local and she has fabric in every nook and cranny. Not organized at all and then you go down stairs and rooms and rooms of fabric.....
Another one I go to has lots of fabric, organized, and I could spend hours at that one. Very homey atmosphere...
