Chili Recipe
This makes a lot so you may want to half it.
1/4 c. olive oil
1 pound of stew meat (I used a chuck roast)
2 pounds of ground round
1/2 pound ground Hot Italian sausage removed from casing
1 cup of each,yellow,green and red pepper diced
2 cups of dice4d onions
1/2 cup of Regina red cooking wine from Walmart
2 14.5 ounce cans of stwed tomatoes(Demonte Mexican Recipe).I used diced tomatoes with zesty mild green chiles
1 29 0z.can tomato sauce
1 tablespoon tomato paste
2 tablespoons dark brown sugar
1 tsp.salt
1 tsp. black pepper ground
2 tablespoons ground cumin
2 tablespoons hot chili powder1 tablespoon Aleppo pepper(substitute 1/4 tsp.paprika and a tiny pinch of cayenne pepper
1/2 teaspoon ground bay leaves
11/2 cups water
1 - 14 ounce can red kidney beans,rinsed and drained

Heat oil in a large pot and brown stew meat on both sides.Remove meat and set aside.
Brown ground beef and Italian sausage.Remove and set aside.

Remove excess oil,leaving 2 tablespoons.Add peppers and the onion to the pan.Saute on medium heat for 5 minutes.
Add wine to peppers and onion. Reduce by half.Place all three meats back into the large pot.
Add stewed tomatoes,tomato sauce,tomato paste,brown sugar,salt,pepper,cumin,chili powder,Allepo pepper(
OR THE SUBSTUTUTE),ground bay leaves and water.Bring to a boil.Reduce heat and simmer for about 3 hours stirring occasionally.
Add kidney beans and let simmer for another 30 minutes


Serve with grated cheese,sour cream and chopped onion if desired/
This really freezes well!!


It is a bit expensive but well worth every bite!!!
