as far as i know, the only reason to wait is to let the starch absorb into the fabric. in some cases, with some starches, if you don't wait, the starch forms white flakes when it hits the hot iron.
one advantage to the maryellen's best press starch is that you don't get white flakes, so you don't have to wait. (and it smells lovely too)
