(parents really like what their kids make and not what is made for them) even if it is only scribbles. especially when the kid has some disabilities. like if you have some kids that could handle sitting at a sewing machine then pillow cases would be nice for them to make. if all they could do is maybe color. then doing shelbies suggestion of crayons on fabric for a quilt that would be good. you could also take a photo of the each kid that is less functional and print it out on fabric and then have the kids color around it and then you could sew it into a little pillow. (that one would really be a big hit with the parents, especially if there are medical issues with the kids)hope that this helps.
