It's usually done with dried apricots. But you should be able to use ripe ones. Just cook them down.

Apricot Fried Pies
1-1/2 cups cooked dried apricots, mashed and sweetened to taste. You can also use any dried fruit.
Roll pastry 1/8" thick and cut in 5" circles. (I use refrigerated pie crust and use a saucer to cut circles.) Place about 1-1/2 Tbsp. fruit mixture on each pastry round. Fold in half and press edges together with fork tines to seal. Prick top in several places. Fry in hot oil (375 degrees until light brown, about 3 minutes. Drain on paper towels and sprinkle with sifted confectioners sugar if desired. (My mother fried them in an iron skillet with just enough oil to keep them from sticking.)
