I love refrigerator pickles. Just slice cucumbers thinly, put into container with equal parts oil and vinegar, salt and pepper to taste. Add sugar for sweeter pickles.
The other thing I like to do is stuff them with tuna salad. I hollow out the cucumber and put the seeds into the tuna. I only use a little mayo in the tuna. You could make chicken orchard salad too. I usually eat these sliced up with a stuffed tomato to use the rest of the tuna and some big leaf lettuce.
Of course, I love cucumbers as a snack. Just the right amount of crunch and cool.
