I find wide backing really a pain in the #$%^ to iron and handle so usually stick to piecing normal width fabric (that way I am also free to choose a nice complementary pattern for backing). I am also a bit bored with just plain muslin for backing since I have made a few quilts with beautiful tonals or subtle prints to complement the top. It doesn't take much to sew lengths together and doesn't detract from the quilt after quilting it. I think a color coordinated backing ads to the quilt
