When I need a cutting mat, I just pull one out from between the cabinet and the wall.
TO clean it, I use a lint roller and a damp dishcloth.

I still have the box that one of my mats came in. It sits behind my dresser and when I don't need my mat out, I just slide it in there. It's out of site and doesn't get in the way
