I make wedding cakes try these tips...
1. Don't grease and flour your cake pans. Grease them and then line them with parchment paper (I've used waxed paper in a pinch and it works too). Then spray the parchment paper with a cooking spray.
2. When you take the cake out of the oven immediately spray the cake pan and the cake with water not just a few sprays but until you don't hear the sizzle when the water hits the pan. This stops the baking process quickly.
3. After spraying with water remove cakes from pan and wrap with plastic wrap and allow to cool. Also helps with ending the baking process.
