Diabetic No Bake Cookies
Mix in heavy saucepan:
4 cups Splenda
1 cup margarine
1 cup milk
Bring to a boil and boil for 3 mins.
Take from heat and add:
1 cup peanut butter
2 teaspoons vanilla extract
6 cups rolled oats
2 cups coconut
Drop by large spoonfuls onto waxed paper. These set up differently than the ones with sugar, just moisten hands and make balls with them and set on waxed paper to cool.
This makes 39 very large cookies.
