There are lots of books and patterns out just for the 5" squares. There are 3 (I think) books in the Nickel Quilts series, "Loose Change: Quilts from Nickels, Dimes and Fat Quarters" has lots of wonderful projects that work up from 5" or 10" squares, and/or fat quarters plus some yardage for some of them.
Carrie Nelson (Miss Rosie's Quilt Company) has a series of patterns under the Schnibbles line that are based on 5" squares. and so on.
You can also just sew them together in rows and join the rows. Or make 9-Patches, perhaps then "Disappear" the 9-Patches.
Depends on how many you have and what you want to do with them,
