I agree!!! I had much rather trim a little than risk having it too small.
My theory - when I cut triangles AROUND a template - just a little bit extra fabric is added - maybe only 1/32" per side, but if I add the two hypotenuse/diagonal edges, that's 1/16 of an inch - and then the outside edges also have a "smidge" extra -

So when I cut a (more or less exact) +7/8 inch square, then I end up with skimpy HSTs.
