Hi Mikki, welcome to quilting! You'll find lots of uses for freezer paper, especially if you applique. Instead of making templates to trace around, I draw the finished size piece I need on the dull side of the paper, then use a dry hot setting on the iron to bond the paper to the fabric. The freezer paper should last through several ironings until it runs out of "stick", but this will save lots of tracing and looking for the right marking tool.
I've also used stencils made of freezer paper to mark quilts. Stitch along the outside edge and peel the paper away when you're done...again, no marking lines to remove. I'm sure there are lots more uses people here will come up with, those are just my 2 favorites.
