ARBORIO RICE PUDDING
1/2 cup arborio rice
4 cups milk or 1/2 and 1/2 (or a combination)
Dash of salt
1/4 - 1/3 cup sugar
1/4 tsp. cinnamon
1 tsp. pure vanilla extract
1/2 cup raisins, plumped, if desired
(To plump raisins, put in a shallow bowl with enough water to just cover. Heat on high in microwave for 30-60 seconds. Let cool, drain.)
Combine rice, milk, salt and sugar (start with minimum amount of sugar. You may add more later if you like). Bring to a boil. Reduce heat to low and cook 25-40 minutes, stirring often. When it begins to thicken, stir every 5 minutes to prevent sticking. When rice is done, remove from heat. Add cinnamon, vanilla and raisins. Taste for sweetness and add sugar to your taste if necessary.
Serve warm or chilled. If pudding is too firm for your liking after it is chilled, mix in a little additional milk or cream.
