Some people cut just enough pieces to make a "test block" - before going on.
Or cut some and sew. As far as I know, there is no "law" that says you need to cut everything out before you start sewing.
That said - it is a good idea to keep all the fabrics together for a project - otherwise one of them could go "missing"
