Chop up & saute l onion & 1 green pepper
Add 2 cans cannelini beans, rinsed & drained
2 c water
2 c canned diced tomatoes or fresh if you have
1/2 c bulgar, quinoa, or lentils
1 tsp chili powder or curry optional
Bring to boil, then cover and simmer until grain is tender.
Serve on baby spinach or arugula, which will wilt. Yummo!
Serves 6 for about 2 Weight Watchers points each.
And it tastes great!
