I've not had very good luck with adhesive batting on a larger quilt - I found it hard to get all the wrinkles out and ended up frustrated! I love wool batting for its warmth and the fact it is so light and drapes beautifully...it is pricey, though.

How you do the actual quilting is really up to you - you could do a nice all over design (stipple, for example) that would include the entire top. The advantage of an all over design is there is less starting and stopping.
