I have never shared this before, i hope my best friend will forgive me...It started out her recipe, but i upgraded it, so now it is mine. Stupid, quick, and never bring any home.
Kelly's Taco salad-
1-1 lb. bag of salad greens, your choice
I can Kidney beans, drained and rinsed
1 can garbanzo beans, rinsed and drained
1 can chopped olives
1/2 lb. cheese grated (I buy it this way)
1/2 bag of tortilla chips (any variety)crunched
1 lb. ground meat (I use turkey)
1 8-10 oz jar of chunky salsa
Place first 5 items in a Large bowl. Crunch chips over top. Pour meat over top while still warm. Toss lightly, Toss lightly again, (Keeps things well blended). Just before serving, pour on the chunky salsa and mix again. Serve with Sour cream, ( I use plain yogurt, personal preference). (I have a weird aversion to cream of any kind.)
This is even good, gently heated in a fry pan, a little at a time, the next day for lunch.(That is why I use Turkey, no grease)
At first I thought I would not like the beans, because they are canned, but if you leave them out, you are missing an important part of the mouth texture. I tried it once. Blech! You can also serve it with that wonderful avocado sauce that I can not spell...guaco.....you know the one I mean. Enjoy!
