I made my traditional chow chow yesterday and I thought maybe you girls might want the recipe. This uses up all those green tomatos that the frost is about to ruin...

3 large onions
5 green tomatoes, stem ends removed
6 green peppers (I use the red for color)
2 cups green beans
2 cups cauliflower broken into small flowerets
2 cups fresh corn kernals
1/4 cup pickling salt
3 cups sugar
2 cups vinegar (white)
1 Tablespoon mustard seed
1 1/2 teaspoon celery seed
3/4 teaspoon tumeric

Using course blade of food processor, grind onions, green tomatoes, and green peppers. In a large bowl combine ground vegtables, beans, cauliflower and corn. Sprinkle with salt and let stand overnight. (As you can see I don't grind my vetables except the tomatos) I just cut them up corn kernal sized)

Rinse and drain, Combine sugar, vinegar, mustard seed, celery seed, tumeric and 1 cup water; pour over vegtables in a large pot. Bring to a boiling; then allow to boil gently 6 minutes.

Ladle into hot sterized jars, leaving a 1/2 inch headspace. Adjust lids to just hand tighten,( not real tight). Place into a water bath and process in boiling water bath 15 minutes (20 minutes for reno's altitude) It makes 6 pints or so.

Oh by the way four of these are already gone! LOL! Hubby must have taken them to work to share...
