I personally can't eat it. (Diverticalitus) But I used to love it. Hubby enjoys it so I make it for him and a couple friends who would scream if I didn't give them a jar or two. They always make sure I have green tomatos. LOL!
I am thinking I will make myself some beet relish. I love pickled beets. :~) And it is pretty much a taste like that.
