I actually just used a cake mix (or any recipe) and baked them like cupcakes in the tiny little canning jars (sometimes I use cupcake liners - they look very festive through the quilted glass jars with coordinating fabric on top!). I did worry about whether the glass jars would crack, so I baked them on a jelly roll pan with just a little water in it (about 1/2") - I figured if custard cups could take it, the canning jars could too.

I use them for 'favors' - make King cakes for our Mardi Gras party, this year I think I'll make fruit cake - because for most of us, that's more than enough!, we've used them at bridal and baby showers, just whatever. They're fun and easy.
