If you happen to have the Accuquilt GO! cutter, they have a die that will cut your apple core to the exact size you need. I have the die but haven't played with it yet because I have 3 baby quilts to finish first. If you don't have the Accuquilt GO! cutter it sure is something to look into. Hope you find your answer.
