Zuchinni Squash
3 med. zuchinni, sliced
1 large onion, cut into thin rings
1 lg. can chopped tomatoes
4 oz. shredded cheddar cheese
Brown the zuchinni either in a non stick pan or in a little bit of oil until it starts to turn brown. Add the onion and continue cooking until the onion starts to get soft. Add the tomatoes and simmer for 20 min. Put the cheese on top, allow to melt, and serve.
