Coconut Cream Pie from Texas
Cook pie crust in oven till brown.
1 cup sugar,
1/3 cup flour
2 cups milk
3 egg yolks - keep whites for meringue
1 tsp. vanilla
1-1/4 cup coconut
Mix sugar and flour together, stir in milk, bring to simmer, beat egg yolks and add a little of the milk mixture, add back to the pot,
Cook till thick add vanilla, 1 cup coconut.
Pour into browned pie crust.
Beat egg whites, add 1/4 cup sugar and 1/2 tsp of cream of tartar, and 1 tsp. vanilla. beat till soft peaks, spread on pie filling, sprinkle rest of coconut on top and brown in oven.
