NH - pumpkin cheesecake pie - awesome
In a large mixing bowl beat 2 or 1 8 0z packages of cream cheese until fluffy. Add 2/3 cup sugar and 2 teaspoon of pumpkin pie spice. Beat together. Then add 2 eggs and mix, Stir in 1 can of 15 oz pumpkin
Pour into a ready Graham Pie Crust.
Bake at 350 for 35-40 mins or until center is almost set.
Cool for an hour on a wire rake.
Refrigerate for 3 hours before serving.
If you do not have pumpkin spice you can use the following: 1 teaspoon of ground cinnamon, 1/2 teaspoon ground ginger and 1/4 teaspoon ground cloves.
