I have heard other people call it pillowcasing too, but since I've never made a pillow case, I really don't know. I make a LOT of charity baby, toddler and nursing home quilts. I don't have time to make, press and attach binding to make it look pretty. I do the following:

Lay out quilt sandwich batting on the bottom. Then backing face up, then quilt top face down. I mark an 8-10 inch gap on one side and pin the other three. I stitch from one end of the gap all the way around the quilt to the other end of the gap securing or backstitching at the beginning and the end. Then I turn it right side out with the batting in the middle and the top/backing on the outsides. I then ladder stitch the gap closed. The quilt is the bound on the outsides. This method works well for smaller quilts that will be tied instead of quilted.
