I tend to use my applique scissors when I need to cut away part of a seam allowance if its too bulky. Because they have a large flat bottom blade, they are more ergonomic friendly for that. I also use them when I am doing stain glass work. I use my small scissors or embroidery scissors for cutting smaller pieces for applique.
