Hmmm. I'd worry the flannel would shift a lot during use and washing and could unravel at the seams. The sewing is to stabilize the fabrics, even if you don't use batting...
I have made over a dozen flannel/denim rag quilts.....don't do the X stitching across the block.....and have never had any problem whatsoever with the flannel shifting or coming apart.
