You can do any quilt by hand piecing. I use one of those half folding one side cutting, one side ironing boards with mine that way I have a hard surface if I need it.And I can lay pieces in it to keep them flat. you just need to mark your 1/4"line, but don't sew to the end only to your 1/4" line.
