We eat them several ways, but I really like them roasted:

Wash potatoes, leave the skin on, cut into bite sized chunks, place on foil lined baking pan, drizzle with olive oil, salt & pepper. Bake @ 375 degrees for about 30 minutes or until fork goes in easily.
