Sweet Potato Souffle
1 lg can sweet potatoes (30 oz)
1 tsp vanilla
1/2 c butter
1 tsp cinamon
1 cup sugar
3 eggs
1/2 cup evaporated milk
Drain sweetpotatoes. Beat well. Add remainder of ingredients. Beat until fluffy. Pout into a buttered cassarole dish. Bake 20 minutes at 350 degrees. (now for the yummy part)
Combine: 1 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped nuts
Blend with fork. Sprinkle on top of sweet potatoes. Bake 10 more minutes.
This is sorta like my recipe but you can bake the sweet potatoes and then mash them. I make a praline topping like Sarah's.
