How about stuffed green peppers? They are even better reheated the next day and who cares if it is also a main dish - it's a green vegetable!
You could also do Haluski - buttered green cabbage and noodles - YUM.
Split pea soup?
I bet there will be lots of green beans and/or broccali dishes - maybe too many!
Why does it have to be specifically GREEN veggies? That doesn't really give you that much to work with. And no salads? How limiting is that? Who thought this up?
